Curry casserole
Prep time: 10min. Cooking time: 45-60min. Servings: 8-10
This is an easy recipe that just requires a baking tray, veggies, rice, coconut milk, and tomato puree.
Ingredients
- 4 tsp oil
- spices
- 4 bay leaves
- 1 cup red onions chopped
- 6 cloves of garlic finely chopped
- 2 chili's
- 450g tomato puree
- 850g coconut milk
- 1.5 tsp salt
- 6-8 cups of chopped vegetables
- Rice
Instructions
- Preheat oven to 205°C
- Mix oil, spices, and bay leaves in the tray, then add onion, garlic, and chili stirring to coat.
- Put tray in the oven for 10min and chop up 6-8 cups of veggies in the meantime (enough to fill a large mixing bowl)
- Remove tray from the oven, add coconut milk, tomato puree, and veggies. Stir contents thoroughly and put back in the oven for 45-60min.
- Begin preparing rice.
Tips: For the vegetables, good choices are green beans, potatoes, carrots, chickpeas, lentils, pumpkin, and capsicum. Spices can be omitted/added as preferred. Spices from the original recipe reads as follows: 4 tsp ground coriander seeds, 2 tsp ground cumin, 1 tsp ground cardamom, 1/2 tsp black pepper, 2 tsp paprika, 1/2 tsp ground mustard)
